Shredded Chicken & Sunblush Tomato Rolls

Served on a Ready to Bake Multi-Seed Roll, this chicken, spinach and sunblush tomato sandwich is a great choice for a lunchtime bite. ​​​​​​​​

Serves: 4

Takes: 20 minutes


  • 2 tbsp light mayonnaise

  • 3 sun-blush tomatoes in oil, finely chopped

  • Small handful fresh basil leaves, chopped

  • Large handful baby spinach leaves

  • 6-8 sunblush tomatoes in oil, sliced

  • 2 cooked chicken breasts, shredded

  • Black pepper

  • Simple salad made with quartered cherry tomatoes, fresh basil, salt, pepper and olive oil


  1. Preheat the oven and bake the Multi-Seed Rolls according to the pack instructions

  2. Meanwhile mix the mayonnaise with the finely chopped sun-blush tomatoes and basil 

  3. Split the Multi-Seed Rolls and spread a little basil mayo over each base. Top with some spinach leaves and sliced sun-blush tomatoes then divide the chicken between the rolls. Add another small dollop of mayo and a good pinch of black pepper then pop on the lids. Serve with the tomato salad on the side
