Melted Caprese Open Sandwich

This warm open sandwich is a twist on the classic Caprese salad. Featuring creamy mozzarella and burrata, juicy tomatoes and peppery rocket, these open sandwiches are great to serve when the weather starts getting warmer. 

Serves: 2

Takes: 25 minutes


  • Handful grated mozzarella cheese

  • 2 vine tomatoes, a handful of cherry tomatoes or a selection of different size and colour heritage tomatoes

  • ½ burrata cheese, or half a ball fresh mozzarella

  • 2 tbsps pesto (chilled/fresh if possible but from a jar is ok too)

  • Few fresh basil leaves 

  • Handful of rocket leaves

  • Freshly ground black pepper


  1. Bake the Rustic Rolls according to the pack instructions.

  2. When they’re nearly ready, heat the grill.

  3. Split the Rustic Rolls in half and divide the grated mozzarella between the two bases. Pop under the grill until golden.

  4. Add sliced tomatoes and torn burrata (or mozzarella) and return to the grill for a minute to melt.

  5. Add a little pesto, a grind of pepper and some basil leaves and pop on the lids. Serve with rocket salad on the side.
