Avocado, Poached Egg & Chorizo Brunch Rolls
A hearty breakfast or brunch sandwich idea that takes less than half an hour to make and served on Ready To Bake Rustic Rolls. This combination of creamy sliced avocado, rich chorizo and spicy chilli flakes, topped with a poached egg, is a delicious way to the start the day.

Takes: 20 minutes
Ingredients
4 free-range eggs
butter
8cm piece chorizo, thinly sliced
2 small avocados, halved, de-stoned and sliced
Dried crushed chillies/chilli flakes
Method
Preheat the oven and bake the Rustic Rolls according to the pack instructions
Meanwhile poach the eggs in simmering water for about 3 minutes
Split the Rustic Rolls and butter lightly then divide the avocado and chorizo between the four bases
Top each one with a poached egg and sprinkle over a pinch of chilli flakes before serving
